Blackstone Chicken Fajitas are so easy to make and everyone will devour them. Filled with juicy chicken, onions, bell peppers, and your favorite toppings. Serve in a tortilla or turn into a chicken fajita bowl!

This is one of my favorite Blackstone chicken recipes and I can’t wait to share it with you.

When it comes to Blackstone Chicken Fajitas, there is a lot of play on the ingredients. Consider trying these ideas:

  • Taco Seasoning – If you don’t have the Fresh Jax seasonings, swap it for regular taco seasoning instead. It’s just as delicious!
  • Make Your Own Seasoning Combination – Feel free to combine any of your favorite seasonings like garlic powder, onion powder, paprika, cumin, cayenne pepper, and oregano!
  • Add cheese – To make the chicken on the Blackstone extra gooey, add some cheddar cheese before removing it from the griddle.
  • Beans – Add some black beans or kidney beans to the fajita mixture. Give it a good stir and let set for 1-2 minutes before removing.

No, if you aren’t in the mood to slice the chicken you can wait until it’s done cooking first. You will need some good quality Blackstone Accessories so you can chop the chicken.

Or, if you would rather cut it ahead of time, it will cook even faster. It’s completely up to you.

How do I serve chicken fajitas?

I typically serve them wrapped in a tortilla, but you can certainly add all the ingredients to a bowl instead. Both ways are tasty so it’s just a matter of your preference and your diet.

Do I use frozen or fresh onions and peppers?

Either way works fine and has its own set of advantages and disadvantages. Using fresh peppers and onions allows them to char a little more and they actually cook faster. Frozen veggies are more watery because you have to cook off all the ice.

The deciding factor to me is what I have on hand and the price. Typically, frozen onions and peppers are SUPER cheap so I always keep them on hand. I am all for saving some money when I can.

Do I have to use chicken breasts?

I prefer the results of chicken breasts, but you could swap them for boneless skinless chicken thighs. Follow the same directions either way.

Blackstone Chicken Fajitas Recipe

Blackstone Chicken Fajitas are so easy to make and everyone will devour them. Filled with juicy chicken, onions, bell peppers, and your favorite toppings. Serve in a tortilla or turn into a chicken fajita bowl!

Ingredients

  • 4 - 6 chicken breasts
  • 2-3 bell peppers, any color (fresh or frozen)
  • 1 large onion
  • 2 tablespoons Fresh Jax Mesquite Lime seasoning
  • Salt, to taste
  • Pepper, to taste
  • 4 tablespoons olive oil

Instructions

  1. Thinly slice the bell peppers and onion.
  2. Turn on the griddle to medium-high heat.
  3. Add oil in 2 areas on the griddle. One for chicken and one for onions and peppers. Once the oil is hot add the chicken breast and onions and peppers. Cover onions and peppers and stir frequently to prevent burning.
  4. Season chicken and cook for 5 minutes, then flip. Cook for an additional 5 minutes and check the temperature. Continue cooking until the chicken reaches 160 degrees F. Then slice chicken into thin strips. Turn down the heat to low while the veggies continue to cook.
  5. Once veggies are done cooking mix everything together and remove from heat. Serve and enjoy!
