Ingredients Needed For Sausage and Egg Chimichangas

  • Tortillas
  • Breakfast sausage
  • Potato 
  • Shredded cheese
  • Salt and pepper
  • Oil

How to make Chimichangas for Breakfast

Step 1: Prep the potato

Cut up the potato into cubes. (about 1 ½ inches in size) Cover in oil and salt & pepper, and then put them in the air fryer basket. Cook for 8 minutes at 400 degrees. 

Step 2: Cook the sausage 

Cook the sausage in a skillet on the stove. Break apart, so it’s crumbly. Once cooked, take the sausage out of the skillet. 

Step 3: Add the egg

Whisk the egg into the sausage grease and scramble it. 

Step 4: Combine

Mix together the sausage, eggs, potatoes, and cheese in a bowl.

Step 5: Add to the tortilla

Put the mixture into a flour tortilla. Fold. Spray the basket of the air fryer with nonstick spray and then add the folded burrito.

Step 6: Cook

Add the burrito to the basket and cook for 5 minutes at 380 degrees. Flip and cook for another 3 minutes.

Breakfast Chimichanga Tips 

  • Be sure to flip the tortilla in the air fryer. This is a must to get the entire chimichanga crispy. 
  • When folding the tortilla, fold so that the seams are closed. If not, the mixture will leak out, causing a mess. 
  • Adding more ingredients like diced onions or fresh cilantro is a fast and simple way to boost the flavor.
  • Don’t forget the toppings! This is where each person can make their chimichanga taste unique and different.

Is a chimichanga always fried?

Yes, the texture of a fried chimichanga is what makes it a chimichanga! However, this air fryer chimichanga recipe proves that you can have “fried” food that is healthy. 

Since the air fryer uses hardly any oil, this is a simple and easier way to cook chimichangas without the worry of all the extra calories and fat. 

What are good toppings for chimichangas?

Toppings are never a bad idea, and they’re always almost endless. Some of the most popular chimichanga toppings are homemade guacamole, fresh cilantro, salsa, and even a squeeze of fresh lime juice or fresh lemon juice. 

Don’t forget that you can also melt some cheese on top and even add a sprinkle of chopped bacon, too!

How do I store leftover chimichangas?

If your eyes are bigger than your belly and you have leftovers, rejoice! This just means that you can enjoy this flavor and taste again.

To store, let the cooked chimichanga cool down all the way and then add it to an airtight container. Place it in your fridge, and plan on eating it within 2 days.

To get some of that crispiness back, you can add the chimichanga back to the air fryer for a couple of minutes to reheat and cook!
