Some days there is nothing better than some drool-worthy beer cheese dip! Of course, I come from a family where cheese is a staple in everything! Plus, what’s better than melted cheese? Not much. You’ll especially love this one: two different kinds of cheese, ground beef, your favorite beer, beans, and a few other items to add flavor. And the best part about it is it’s easy to substitute things you don’t like or want something different. It’s too easy and delicious not to try.
Drool-Worthy Beer Cheese Dip Recipe
My family does a lot of cheesy dips. What can I say? We’re a big fan of any kind of cheese dip. However, this beer cheese dip is truly so amazing I could eat it all in one sitting! It’s probably not the best decision as you might need some bigger jeans after! Might be worth it though… tempting!
This beer cheese dip is super easy to make, and you’re going to want to make it again. And again. Grab one of your kids, and let them help you! They’ll have such a great time helping out in the kitchen, and plus, they also get to reap the benefits!
This beer dip recipe makes a pretty large batch, and you can feed several hungry people. It’s terrific if you are hosting a game night or movie night too. We love eating appetizers and dips for pretty much all occasions.
What You Need To Make Easy Beer Cheese Dip
You won’t get enough of this easy beer cheese dip! It’s very easy to make and can be made all in one pan! You’ll definitely want to save this recipe because you’ll want to make it again!
- 1 pound ground beef (browned)
- 12 ounces of beer – I used Corona
- 1 cup shredded pepper jack cheese
- 1 cup shredded cheddar cheese (we use sharp cheddar)
- 16 ounces diced Velveeta cheese
- 1 can black beans
- ¼ cup cilantro
- 1 can Rotel tomatoes
- Salt (to taste)
- Pepper (to taste)
- Red Pepper flakes (to taste)
How To Make Beer Cheese Dip
Get yourself a large skillet and prepare your ingredients. This will be ready to eat before you know it! And it’s best served hot and melty.
- Grab your ground beef. Brown, drain, and rinse off any excess grease.
- Return beef to skillet. Pour in the bottle of beer and let simmer 5-7 minutes.
- Mix in salt, pepper, red pepper flakes, bean, cilantro, and a can of Rotel tomatoes. Add both kinds of cheese too. Cook on a low/med heat. Stir frequently to prevent sticking, until cheese is melted.
- Serve hot, add whatever toppings you wish.
- Enjoy!
Hot Beer Cheese Dip Variations
Obviously we all have different taste buds and you can change up what you need to make it fit your tastes! I’m not a big fan of cilantro so there will be times I might leave it out. It’s truly up to you!
- We like Corona (not the virus, of course!), but you can use whatever type of beer you wish.
- Use whatever cheese you prefer—sharp cheddar, mozzarella, Swiss, provolone, etc.
- Try kidney or tri-color beans instead of black beans.
- You can top it with sour cream, avocado, tomatoes, cilantro, salsa, or jalapenos.
- To avoid burning the cheese, try to cook on a low/med-low heat. Keep it easy to make it the best kind of cheesy.
- Substitute ground turkey, pork, chicken, or any other meat or go meatless if you want a vegetarian option.
- You could also add all the ingredients to a slow cooker to have it ready for a party too. Just make sure to brown the hamburger first and stir it on occasion. We like to use those slow cooker liners to prevent sticking when we do.
- Add some hot sauce or a dab or two of sriracha if you like your dips to be spicy. Another option is a pinch of cayenne pepper too.
Can You Save Beer Cheese Dip For Later?
Of course! As much as we would all love to sit down with a bag of Frito Lay Scoops and eat all of it, our stomachs would hate us. Make sure the dip is cooled down and put in an air tight container. Can be refrigerated for 3-5 days, if it’s not eaten up by then.
What Should I Serve With This Beer Cheese Recipe?
I personally love it with some corn or tortilla chips, but you can use anything! It’d be great for taco nights or parties with friends. You can use breadsticks, celery, bell peppers, tortilla chips, Doritos, Frito’s scoops, or even roll it up in a tortilla and eat it like a taco! The possibilities are really endless.
- Breadsticks– get some breadsticks or french bread cut into cubes and dip it.
- Bell peppers– cut up pepper slices if you’re looking for a low-carb option.
- Pretzels – Use crunchy or soft pretzels and dig in! They are terrific with the flavor of the beer cheese.
- Tortilla chips – use to dip or pile on the chips and top with beer cheese dip! No matter what way you eat it, it’s a good combination.
- Fritos – I love the scoops because they add a terrific flavor that pairs awesomely with the dip. It’s basically bar food made right in your kitchen.
Can I Make This Cheese Dip Vegetarian?
Of course! You can add more beans or a different variety of beans to it. There’s also the meat substitute options out there that taste like beef or turkey but vegetarian. I personally think Morning Star has some of the best tasting vegetarian “meat” options.
Tips For Grating Cheese
I HIGHLY recommend using blocks of cheese and shredding it yourself. Bags of cheese is coated with cellulose and it just doesn’t melt the same. I use this Quick Prep Food Grater from Pampered Chef and I can shred cheese in a matter of minutes. Or if you just need a little bit of cheese grated, check out the Microplane Adjustable Grater Set. I use it when I want to top a dish with Parmesan or am traveling and need it on the go.
I’m a huge fan of anything related to Pampered Chef! No, I don’t sell it, I just happen to love it and use it all the time. So don’t be afraid to check it out!
