While I do spend a lot of time in the kitchen, I don’t always want to. BUT we have to eat…right? Well, making sheet pan dinners is a great way to save time and enjoy a healthy meal.

In our household, we don’t all like the same veggies either. So, this is the perfect for us because everyone can pick and choose which veggies they want. They eat healthy, and I am happy so it’s a win!

🍄 Ingredients

  • Broccoli
  • Mushrooms
  • Butternut Squash
  • Red Onions
  • Sweet Potatoes
  • Garlic
  • Chicken Breasts
  • Olive Oil
  • Spicy Mustard
  • Maple Syrup

🥦 Directions

  1. Preheat the oven to 425 degrees and get out 2 baking sheets.
  2. Chop the squash, broccoli, chicken, red onions, and sweet potatoes.
  3. Mix the chicken, broccoli, squash, onions, sweet potatoes, and minced garlic in a large bowl.
  4. Prepare the mustard sauce by mixing the mustard, salt, pepper, and maple syrup together. Drizzle over the ingredients and stir well.
  5. Add the chicken and vegetables among the two sheet pans. Bake for 15 minutes and stir. Bake for an additional 15 – 25 minutes or until everything is cooked well.

NOTES: The mushrooms and broccoli do tend to cook faster than the other ingredients. If you prefer them not to get browned up a fair amount, I recommend cooking everything else and then adding them during the last 15 minutes of baking.

🥣 Expert Tips

  • Due to the water content in the veggies, you may have some water seep out. This is normal. I typically scoop the veggies and chicken off the pan and put them in a bowl without all that juice.
  • If you prefer more sauce, make a second batch and drizzle it on during the last 10 minutes of cooking. It gives you even more incredible flavor.
  • Feel free to swap out any of the veggies you like. Red peppers, fresh herbs, and white potatoes would all be pretty good as well.

Healthy eating never tasted so good! Sheet pan chicken is super easy, filled with lots of yummy veggies and a crowd-pleaser.

Total Time 40 minutes

Ingredients

  • 2 cups broccoli florets
  • 1 package mushrooms (any variety)
  • 1 small butternut squash (diced)
  • 1 medium red onion (cut)
  • 2 sweet potatoes (diced)
  • 3 cloves garlic (minced)
  • 3 - 4 chicken breasts, boneless skinless (diced into bite-sized pieces)
  • For the sauce
  • 1/4 cup olive oil
  • 2 tablespoons spicy mustard
  • 1 tablespoon maple syrup

Instructions

Feel free to swap any of the veggies to fit your likes.

You can wait to add the broccoli and mushrooms during the last 15 minutes of cooking time if you don't want them well done.
