Layered Enchilada Casserole is the perfect comfort food with layers of tortillas, ground beef, beans, corn, and lots of gooey cheese!

We love to add pizzazz to our taco nights by serving foods other than tacos! Tonight it was this easy layered enchilada bake and it turned out AMAZING!

Ingredients Needed:

  • Ground beef
  • Refried beans
  • Corn
  • Black beans
  • Shredded cheese
  • Cumin
  • Chili powder
  • Salt
  • Tortillas, corn or flour
  • Enchilada sauce

How To Make Layered Enchiladas

Step 1: Prepare beef mixture

Brown ground beef and preheat oven to 375 degrees. Add in the black beans, corn, seasonings, and all of the enchilada sauce (reserve 2 tablespoons of sauce)

Step 2: Make layers

Place 2 tablespoons of enchilada sauce in the bottom of a baking dish. Add tortillas shells. (I only needed 2 tortillas per layer but if you are using a larger dish you will need more)

Spread a layer of refried beans onto tortillas. Add a layer of the ground beef mixture. Sprinkle with cheese. Repeat the process until you have used the ingredients and the top is covered in cheese.

Step 3: Bake

Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is melted.

Step 4: Serve

Add your favorite toppings and serve. Enjoy!

Tips & Tricks

  • I used an 11×7 inch pan and only needed 6 medium sized tortillas. However, if you use a larger pan, you will most likely need more tortillas. Use as many as you need!
  • Shred your own cheese instead of buying bagged shreds.
  • Adjust the ingredients based off of what you like.

There are no limits to what you can add on top of this layered enchilada casserole! Here are some things I used and some additional ideas:
