Pasta is one of my favorite comfort foods, it’s warm and cheesy goodness that can melt all my stress away. It’s also usually a really easy meal to make when you don’t feel like spending hours in the kitchen. This Sausage Stuffed Manicotti is one of my favorite dinners to make for my finicky family.

🧄 Ingredients

  • Parmesan Cheese
  • Mozzarella
  • Eggs
  • Parsley
  • Salt
  • Pepper
  • Breakfast sausage
  • Pasta Sauce jarred
  • Alfredo Sauce jarred
  • Manicotti Noodles
  • Minced garlic cloves

⏲️ Directions

  1. Preheat the oven to 350 degrees, cook the sausage until browned.
  2. Spray your casserole pan with non-stick spray.
  3. Use a bowl to combine all of the ingredients, save 1 cup of mozzarella cheese to the side. Fill the uncooked manicotti noodles with the mixture. You can use a pastry bag for even easier filling.
  4. Cover the manicotti shells with the rest of the sauce mixture and top with the remaining mozzarella cheese. Sprinkle some parsley over the top. Cover the stuffed manicotti shells with tin foil. Bake for 50 minutes, then take the foil off and bake for an additional 10 minutes.
  5. Serve with extra parmesan cheese and your favorite side dish.

  • You can precook your noodles if you like but it’s not necessary.
  • Using a piping bag will save time and you can create your own with a Ziploc bag.
  • Use gluten-free noodles if that fits your diet.
  • Use fresh cheese that you shred yourself for an even better tasting dinner.
  • You can cook the sausage ahead of time to throw dinner together even quicker.
  • Use a spicier breakfast sausage for a little extra kick.

This comforting Sausage Stuffed Manicotti is the ultimate dinner idea! It's so fast and easy and you don't even have to boil the shells!

Total Time 1 hour 10 minutes

Ingredients

  • 1/2 cup parmesan
  • 8 ounces mozzarella (divided)
  • 1 egg
  • 1/4 cup parsley + 2 tablespoons for garnish
  • Salt (to taste)
  • Pepper (to taste)
  • 1 package breakfast sausage
  • 1 jar favorite pasta sauce
  • 1 jar alfredo sauce
  • 1 box manicotti noodles
  • 3-4 garlic cloves, minced

Instructions

1. Cook sausage until browned and preheat oven to 350 degrees.

2. Spray casserole pan with non-stick spray.

3. Combine all of the ingredients except for 1 cup of mozzarella cheese in a bowl. Fill the uncooked manicotti noodles with the mixture. Use a spoon or a pastry bag.

4. Cover the manicotti shells with the rest of the sauce mixture and top with cheese. Sprinkle some parsley. Cover with a piece of tin foil. Bake for 50 minutes, then remove the foil and bake for an additional 10 minutes.

5. Serve with extra parmesan cheese and your favorite bread.

Notes

  • I skip boiling the noodles and they cook perfectly. However, if you would rather boil them first, that's more than fine.
