Ingredients

  • 1 1/2 - 2 pounds Ground Beef
  • 1 medium onion, diced
  • 2 cans black beans
  • 1 can pinto beans
  • 1 can sweet corn
  • 1 can rotel tomatoes
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1 packet ranch seasoning
  • cayenne pepper, to taste
  • salt, to taste
  • pepper, to taste
  • toppings

Instructions

  1. Turn the Instant Pot to saute and brown the ground beef.
  2. Add onions to the pot and saute until translucent.
  3. Sprinkle with salt & pepper.
  4. Strain off any excess grease.
  5. Add taco seasoning and ranch packet.
  6. Add tomatoes and beans.
  7. Put the lid on the pot and cook for 10 minutes/manual high pressure.
  8. Complete a 15 minute natural release, then finish with a quick release.

Notes

  • Can also be made in slow cooker or on the stove top.
  • Add any toppings you enjoy.
