Mixed Berry Cobbler

Mixed Berry Cobbler is loaded with fresh blueberries, raspberries and sweet strawberries. Made with a tender biscuit topping, pecans, and topped with a scoop of ice creamberries and a few sprigs of mint.

Ingredients

Filling

  • 3 cups strawberries quartered
  • 1 cup blueberries
  • 1 cup raspberries
  • 2/3 cup sugar
  • 3 tablespoons flour
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice

Biscuit Topping

  • 1 1/2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 1/2 sticks butter chopped in small pieces
  • 1/2 cup heavy cream
  • 1 tablespoon melted butter
  • 1/8 cup coarse sugar optional
  • mint leaves garnish, optional
  • 1/4 cup pecans optional

Instructions

  • Preheat the oven to 375 degrees. Put the fruit, sugar, vanilla, salt, and flour in a cast iron skillet. Drizzle with fresh lemon juice. Stir until all the fruit is coated evenly.
  • Pour the flour, baking powder, salt, and chopped butter in a food processor. Pulse until a bumpy dough forms. Add the heavy cream and pulse until incorporated.
  • Take your hands and form the biscuits into circles. Add them to the top of the fruit mixture. Add pecans.
  • Bake for 32-35 mintues or until the fruit cobbler is golden brown. Remove from teh ovenand let cool for 10-15 minutes. Serve with some fresh mint leaves, ice cream, and some fruit. Enjoy!
