- 2 large chicken breasts boneless, skinless (cut in half, horizontally)
- 2 cups all purpose flour
- 1 cup club crackers crushed
- 2 teaspoons salt
- 2 teaspoons pepper
- oil enough to fill fryer or have 2 inches in the bottom of a frying pan
- 3 large eggs
- 2 cups buttermilk
- 4 buns any variety
Cut chicken in half horizontally. This allows the chicken to cook evenly and not overcook.
Combine the eggs and buttermilk in a bowl. Crush crackers into a fine crumb and add to flour, salt, and pepper.
Dip the chicken into the egg mixture, and flour mixture, then the egg mixture and flour mixture again.
Fry chicken in hot oil and cook until it reaches an internal temperature of 165 degrees. F. It takes about 10 – 15 minutes. Flip halfway through to ensure both sides cook equally.
Place chicken on a bun with your favorite sauces and toppings. Enjoy!
2 large chicken breasts should be cut horizontally so you end up with 4 chicken sandwiches.
Add all your favorite sauces and toppings.
I prefer to only season with salt and pepper, but you can add any seasoning you like.
