Ingredients

  • 2 large chicken breasts boneless, skinless (cut in half, horizontally)
  • 2 cups all purpose flour
  • 1 cup club crackers crushed
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • oil enough to fill fryer or have 2 inches in the bottom of a frying pan
  • 3 large eggs
  • 2 cups buttermilk
  • 4 buns any variety

Instructions

  • Cut chicken in half horizontally. This allows the chicken to cook evenly and not overcook.
  • Combine the eggs and buttermilk in a bowl. Crush crackers into a fine crumb and add to flour, salt, and pepper.
  • Dip the chicken into the egg mixture, and flour mixture, then the egg mixture and flour mixture again.
  • Fry chicken in hot oil and cook until it reaches an internal temperature of 165 degrees. F. It takes about 10 – 15 minutes. Flip halfway through to ensure both sides cook equally.
  • Place chicken on a bun with your favorite sauces and toppings. Enjoy!

Notes

2 large chicken breasts should be cut horizontally so you end up with 4 chicken sandwiches. 
Add all your favorite sauces and toppings
I prefer to only season with salt and pepper, but you can add any seasoning you like.
