Ingredients

  • 1/2 teaspoon garlic powder
  • 2 teaspoons jalapeno juice
  • 2 teaspoons jalapenos
  • 1/4 cup mayonnaise
  • 1/4 teaspoon salt
  • 1/2 teaspon cayenne pepper
  • 1/2 teaspoon cumin
  • 1 pound chicken breast roasted & sliced
  • 2 1/2 cups shredded cheese any variety
  • 5 flour tortillas

Instructions

  • Mix the mayonnaise, minced jalapenos, jalapeno juice, and spices in a mixing bowl until well combined.
  • Start to assemble the quesadillas by laying a tortilla open on a flat surface. Position half a slice of cheese on one half of the tortilla (length-wise), followed by ½ cup of the shredded cheese.
    Add 5-6 slices of chicken to the cheese and spread one tablespoon of creamy sauce on the opposite half of the tortilla.
    Fold the tortilla and cut it in half. Repeat this step for all five flour tortillas.
  • Lightly spray the air fryer basket with cooking spray and place the halved quesadillas on the basket. Spray the quesadillas lightly with cooking oil and cook for three minutes at 370F, flipping them over to cook for an additional two minutes.
