Begin by preheating the oven to 350 degrees. Lightly spray a 9 x 13 baking pan.
Slice open the Hawaiian rolls with a serrated knife. If possible try to keep the rolls attached to each other. Put the bottoms of the Hawaiian rolls on the bottom of the pan.
Add a layer of turkey, bacon, swiss cheese, another layer of turkey, and a layer of Colby Jack cheese. Add the tops back onto the rolls.
Melt butter in the microwave. Then add in the spicy mustard, Worcestershire sauce, salt, pepper, and poppy seeds. Whisk until combined. Use a basting brush to brush the mixture on top of the rolls.
Let the rolls sit for 5-10 minutes to allow the buttery goodness to seep down into them.
Cover with foil and bake for 25 minutes. Remove the foil and continue baking for 5 minutes to brown up the tops.
