Filling
- 3 cups strawberries quartered
- 1 cup blueberries
- 1 cup raspberries
- 2/3 cup sugar
- 3 tablespoons flour
- 1 teaspoon vanilla
- 1 tablespoon lemon juice
Biscuit Topping
- 1 1/2 cups all purpose flour
- 1 tablespoon baking powder
- 1 1/2 sticks butter chopped in small pieces
- 1/2 cup heavy cream
- 1 tablespoon melted butter
- 1/8 cup coarse sugar optional
- mint leaves garnish, optional
- 1/4 cup pecans optional
Preheat the oven to 375 degrees. Put the fruit, sugar, vanilla, salt, and flour in a cast iron skillet. Drizzle with fresh lemon juice. Stir until all the fruit is coated evenly.
Pour the flour, baking powder, salt, and chopped butter in a food processor. Pulse until a bumpy dough forms. Add the heavy cream and pulse until incorporated.
Take your hands and form the biscuits into circles. Add them to the top of the fruit mixture. Add pecans.
Bake for 32-35 mintues or until the fruit cobbler is golden brown. Remove from teh ovenand let cool for 10-15 minutes. Serve with some fresh mint leaves, ice cream, and some fruit. Enjoy!
