Steak and Potato Soup Recipe

Ingredients

  • 2 pounds London Broil or your favorite steak
  • 1/4 cup vegetable oil or olive oil or canola oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 cup parmesan cheese
  • 1 tablespoon minced garlic or more to taste
  • 8 cups beef broth
  • 1/2 cup celery diced
  • 5 cups red potatoes quartered
  • 1 tablespoon worchestershire sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 medium onion yellow or white, diced
  • 1 1/2 cups baby carrots
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon dried basil

Instructions

  • Turn the Instant Pot to saute. Then add in the vegetable oil and let it get hot. While the oil is heating coat the steak in garlic powder and Italian seasoning.
    Place the steak in the bottom of the Instant Pot. Cook until it reaches the desired doneness. Remove and let rest for 5 minutes. Cut into bite-sized pieces.
  • Add the beef broth into the pot and use a wooden spoon to scrape all the brown bits off the bottom of the pot.
    Add in the carrots, diced onions, celery, potatoes, Worcestershire sauce, garlic, salt, pepper, thyme, and basil.
  • Add the lid and make sure the pressure gauge is closed. Cook on high for 4 minutes and manually release pressure.
  • Mix in the parmesan cheese, mushrooms, and diced steak. Stir well, and let sit for 15 minutes.
    Top with cheese, green onions and sour cream, if desired. Goes great with your favorite crusty bread. Enjoy!
