How To Make Steak and Potato Soup
Step 1: Sear the steak
Turn the Instant Pot to saute. Then add in the vegetable oil and let it get hot. While the oil is heating coat the steak in garlic powder and Italian seasoning.
Place the steak in the bottom of the Instant Pot. Cook until it reaches the desired doneness. Remove and let rest for 5 minutes. Cut into bite-sized pieces.
Step 2: Deglaze and add ingredients
Add the beef broth into the pot and use a wooden spoon to scrape all the brown bits off the bottom of the pot.
Add in the carrots, diced onions, celery, potatoes, Worcestershire sauce, garlic, salt, pepper, thyme, and basil.
Step 3: Pressure cook
Add the lid and make sure the pressure gauge is closed. Cook on high for 4 minutes and manually release pressure.
Step 4: Add rest of the ingredients
Mix in the parmesan cheese, mushrooms, and diced steak. Stir well, and let sit for 15 minutes.
Top with cheese, green onions and sour cream, if desired. Goes great with your favorite crusty bread. Enjoy!
Frequently Asked Questions
Can I use stew meat?
Sure! Feel free to swap the steak for cut up stew meat. Cut down any overly big pieces. You can sear it for a couple of minutes in the hot Instant Pot with oil. Then follow the rest of the directions.
What kind of potatoes do I need?
I like to make steak and potato soup with red potatoes. However, you can certainly use russet potatoes or gold potatoes. The key is to have tender potatoes that don’t fall apart when pierced with a fork.
How long does leftover potato soup with steak last?
Leftovers last 3-4 days in the fridge. This steak soup tastes even better the next day because the spices marry together as it sits. Warm in a pan over medium heat.
