Tender, juicy Loaded Chicken is made on the Blackstone Griddle in minutes! Topped with crispy bacon, earthy mushrooms, cheddar cheese, and honey mustard.

This easy smothered chicken breast was inspired by a restaurant I used to go to called Montana Mikes. They had what was called the Mountain Topper Chicken and it was my FAVORITE!
My version is made on the Blackstone because it’s my favorite way to cook many of our dishes. How To Make Loaded Chicken Breast
Step 1: Cook the chicken
Start by heating the Blackstone to medium-high heat. Once hot, melt butter on the griddle. Add thin pieces of chicken and cook for 7 minutes then turn. Cook for an additional 8-10 minutes or until the chicken reaches 160 degrees F.
Step 2: Cook the bacon
While the chicken is cooking, begin cooking the bacon. Cook until crispy and set aside until the chicken is done.
Step 3: Cook the mushrooms
While the bacon is cooking, add some more butter to the Blackstone and add mushrooms. Flip as needed until they reach the desire texture, about 10 minutes.
Step 4: Put it all together
Once the chicken is done, add honey mustard to the chicken. Add the bacon and mushrooms. Sprinkle cheddar cheese and let rest for 2-3 minutes or until the cheese has melted. Garnish with parsley (if desired)
Step 5: Rest and Serve
Let the chicken rest for 5 minutes, serve and devour!

- Uniform Sized Chicken – It’s helpful to cut the chicken so it’s sized the same. This way you don’t have to worry about some pieces cooking faster than others.
- Swap the mustard – If you don’t like honey mustard, feel free to use Dijon instead. Both are delicious!
- Shred the cheese – I know you may want to save yourself a step, but it’s so much better when you shred the cheese yourself. YUM!

How do you reheat leftovers?
Microwave method: Place on a microwave safe dish and cover with a paper towel. Heat for 1-2 minutes or until hot all the way through.
Air fryer method: Place the chicken in the air fryer basket and heat at 375 for 5-7 minutes or until hot.
Oven method: Place the loaded chicken breast in a casserole dish and warm in a preheated oven (350 degrees) for 10-12 minutes or until hot.

- 2 slices bacon
- 1/2 cup mushrooms fresh or frozen
- 4 tablespoons honey mustard
- 1 cup cheddar cheese shredded
- Butter for oiling griddle (can use olive oil)
