Cut your pieces of chicken horizontally so you have 2 pieces per breast.
Mix together the eggs and milk with a whisk in a medium sized bowl. Then combine crushed crackers, flour, and seasonings in another bowl. Coat chicken in egg mixture and flour mixture. Repeat until all chicken has been dipped in each mixture two times.
Place chicken in a fryer that is 350 degrees. Fry until the chicken reaches 165 degrees internally, about 10 – 15 minutes. You can also fry in a pan, make sure to flip halfway through.
Dip chicken into a bowl with your favorite barbecue sauce. Then place in the air fryer at 375 degrees for 6-10 minutes or until the sauce is caramelized.
Add the barbecue chicken to the bun with all your favorite toppings and dig in!
Notes
It's fine to add any extra seasonings you like. I keep it simple with salt and pepper, but you can go wild if you want!
