If you are like me, you hate cooking extravagant meals for supper. There are rare occasions when I have the time to spend a lot of time cooking, but not often. I prefer easy to make dinner options like this Instant Pot beef stroganoff recipe.
Not only is this beef stroganoff Instant Pot recipe delicious, it’s also a breeze to clean up. Really, you just have the insert of the pressure cooker, spoon, and your regular dinner dishes. It’s fantastic and the entire family is excited to eat comfort food too.
The best part is that you can make Instant Pot hamburger stroganoff any time of year too. Plus, the prep work takes less than 15 minutes, so you will have time to work on other things like making a salad!
Ingredients Needed
The ingredients for this Instant Pot stroganoff is pretty straightforward. Here is a break down of what you need.
- 2 pounds hamburger
- 1 medium diced onion
- 2 cloves minced garlic
- 6 cups water, vegetable, beef, or chicken broth
- 1 teaspoon dried mustard
- ½ teaspoon pepper
- ¼ teaspoon paprika
- 1 tablespoon Worcestershire sauce
- 1 package egg noodles (16 ounces)
- 1 package sliced baby bella mushrooms (18 ounces)
- 1 cup full fat sour cream
Directions
Using your pressure cooker is a breeze and making quick dinners is so much easier. Your entire family is going to go wild for this beef stroganoff!
First Step: Turn on your Instant Pot to saute. Once hot add in the hamburger, and diced onions. Cook until the hamburger is brown all the way through and crumbly. Drain off the excess grease well. Then deglaze the bottom of the instant pot. Add water or beef broth and begin scraping with a wooden spoon that has a flat edge. Turn off the saute function.
Second Step: Sprinkle in the garlic, Worcestershire sauce, paprika, dry mustard, and pepper. Add the pasta noodles on top. Lightly press it into the liquid. Add the mushrooms and sprinkle with a dash or two of salt. It’s important not to stir or you may end up with a burn notice.
Third Step: Add the lid and make sure the vent is sealed so it comes to pressure. Turn the pressure cooker on and to the manual position for 6 minutes. After the 6 minutes is up, complete a quick release. Make sure the pressure is out of it before removing the lid.
Fourth Step: Pour in the sour cream and put the lid back on. Allow it to sit for a few minutes.
Fifth Step: Add some fresh parsley or oregano on top and serve hot. Enjoy

Storage
Storing leftover ground beef stroganoff is simple. Let it cool all the way down and put it in an airtight container. Place it in the fridge for up to 5 days.
When you are ready to serve the stroganoff, warm it up in the microwave for a minute or two. Make sure to cover it with a paper towel so you don’t get food splatters everywhere.
The beef stroganoff heats up quickly, so you don’t want to heat it too long. If you don’t want to microwave it, you can also heat it up in a skillet on the stovetop. Turn the heat to low-medium and stir it frequently. It usually takes 5-10 minutes, depending on how much you are heating up.
Variations
Go ahead and play around with the ingredints in this stroganoff to give it some new flavors. I love to add in various ingredients here and there just to try something different. Here are a few of my top variations for this Instant Pot beef stroganoff recipe.
- Various meats – You can easily swap out the ground beef for other meats if you want. Chopped up steak, ground turkey, and even ground chicken are fabulous options.
