Rich Oreo Cheesecake Bars
I have ALWAYS been a huge fan of anything Oreo related. Oreo cheesecake has always been something I go crazy for. Then of course, you have brownies which also drive me wild. I figured why not combine the two to create the ultimate Oreo dessert recipe.
It’s pretty much impossible for me to turn down dessert on any day, but when it involves so much chocolate I know I can’t say no.

How To Make Cheesecake Brownies
This cheesecake recipe with brownies is unforgettable. Once you taste it you’ll feel like you have been missing out all this time.
First Step: Warm the oven to 350 degrees F. Then spray an 8×8 baking dish with a non-stick cooking spray. Make sure to coat it well so they don’t stick. You can also line it with parchment paper with an overhang.
Second Step: Mix the butter and chocolate chips in a small saucepan and stir continuously. After the chocolate has melted and they are combined, remove from the stove and let them cool for 10 minutes.
Third Step: Mix together the cocoa, flour, and salt in a small bowl then set it aside.
Fourth Step: Add the white sugar to the melted chocolate and butter mixture. Add in an egg then mix with a whisk. Add in another egg and whisk again. Finally, mix in the vanilla and whisk until combined.
Fifth Step: Slowly mix in the flour mixture to the melted chocolate mixture and combine. Pour the brownie layer into the prepared baking pan.
Sixth Step: Add a layer of 16 Oreo cookies on top of the brownie layer.
Seventh Step: Combine the softened cream cheese, vanilla, sugar, and chocolate chips into a medium bowl. It will be runny and that is fine. Spoon the cheesecake batter onto the cookie layer. Leave the edges without a lot of cheesecake so you end up with a crust edge.
Eighth Step: Sprinkle white chocolate and crushed cookies on top. Then bake the cheesecake bars for 40-45 minutes.
Ninth Step: Remove the cheesecake brownies from the oven and let them cool on a wire rack from 1 – 1 1/2 hours. Then place the easy cheesecake brownies in the refrigerator for 2 – 4 hours so they can finish setting up. Cut into 9 brownies and enjoy!
Cheesecake Brownie Variations
You can make these cheesecake brownies exactly as I have recommended or you can go crazy and add in some extra ingredients. They are so delicious no matter how you make them, but I wanted to point out a few ideas.
- Mint Oreos – I love everything to do with mint! Trade out the regular cookies for the mint version instead. Yum!
- Peanut Butter Oreos – My third favorite Oreo cookie is peanut butter. Use them instead for an even more unique flavor.
- Reese’s Peanut Butter Cups – Forget the cookies completely and use peanut butter cups instead. Talk about sinful!
